Happy St. Patrick's Day

In honor of St. Patrick's Day, and Lance's Irish heritage (25%), and Lance's fond New Mexican food memories, tonight we are making Sheep Herders for dinner: corned beef, diced green chilies, green chili sauce, shredded Monterrey Jack cheese, and sour cream rolled up in (whole wheat) flour tortillas. Bake, covered, just until warm. Mmmmm.

Sounds interesting! I've never had corned beef with chilies. Do you get the corned beef from the deli and just put a few slices in each tortilla?

I did get the sliced corned beef from the deli, then at home I chopped it up a little before putting on the tortillas. I thought the chilies gave it a nice kick.
